Wild Card: Bacon and Corn Pasta
When I told my kids I was writing this newsletter, my son asked, “So are you just doing our favorites? Have you given them (he means you) bacon and corn pasta yet?” And my daughter: “But what about bacon and corn pasta?” The thing about starting a recipe newsletter in January is that corn season is a long way away, and so I wasn’t planning to give you this recipe until this summer. However, it turns out that kids don’t really care about seasonality, so when I spied some corn at the grocery store I bought it and made this and my kids were so happy. Yours will be, too. I don’t usually start with the wild card, but this really is my kids’ all time favorite meal. Like most recipes, it’s flexible—it’s great with shrimp and/or tomatoes added in with the bacon and corn, you could add basil, or I guess even swap the corn for something else (but don’t tell my kids).
