As I put together the recipes for this week, I realized that they definitely have a vibe, a certain mood. I think that mood can best be summed up as, “I want to eat well, but I don’t have a lot of resources for this right now.” There’s too much going on, too much chaos, too much uncertainty. Also, taxes, and spring breaks, and muddy soccer fields. I know last week I was inspired and hopeful. I think we’ll get back there, but this week is all about things you can make cheaply, largely with pantry staples, without paying that much attention while you’re cooking. They’re quick recipes that don’t require side dishes, they mostly use only one pan or pot, but they’re also warm and nourishing. The kind of thing we all need to get through the neverending tempest of news and the pervasive raininess of this particular spring.

Quick: Super Quick Shakshuka

Shakshuka can be made many different ways—they almost always have eggs cooked in a spiced tomato sauce. This version, my favorite, is super quick—I recommend using pre-chopped kale and jarred tomato sauce—and has heft from the greens and chickpeas. It comes together so easily and is so satisfying when you want something warm and filling without a lot of effort.
